Baby Shower Cake

I made this for my comadre's baby shower in February this year. It's a peach cake with peaches and cream filling and covered with swiss meringue buttercream icing and marshmallow fondant for the decorations of the butterflies. This icing is delicious, creamy and looks nice and shiny.

Strawberry Cake

I just felt like baking one day and made this cake for the family to eat. It has fresh strawberries in the batter and in the filling as well. Similar to the peach cake, nice and moist and delicious!

Pumpkin Roll

I have always loved to eat "brazo gitano" like we called them in El Salvador. I made this one, my first roll, last Thanksgiving for dessert together with a flan. It turned out so so good I kept on making them to give to people as gifts for Christmas and to eat at home. The cream that is made with cream cheese is so good, I kept some to add to cookies and other breads as well.

Tres leches with fresh fruit on top

This cake I made for my mom's birthday last July 2011. She loves tres leches, and she loved this one! The only thing I would do different is to make it with more time in advance so that the cake really absorbs all the milks to make it more moist. It was good though don't get me wrong, I'm just a perfectionist I guess :) I topped it with fresh fruit and whipped cream topping.

Ladybug Cake

This was the second cake I ever made. It was fun making it and a little challenging to get the black color in the icing for the ladybug, I also made a piƱata which took so long but it was totally worth it. I made it for my daughter's 2nd birthday party. She loved it. All the kids got to take a bite out of the cake before cutting it. It was funny, they kept lining up to take a bite lol!

Raspberries and Cream Cake

This cake is similar to the peach cake, except I used fresh raspberries for the batter and also for the filling. I didn't put any in the frosting to cover the cake because I didn't want it to be too much. The filling was raspberries and whip cream. My husband requested this cake for his birthday last December, he looooved it!

Peach Cake

Ok this cake is soooo good and moist! You have to try it, just add peaches to the batter and a little bit of the syrup from the peaches if you use canned peaches. I used canned for the cake and fresh peaches for the filling and the top of the cake. I made this one for my dad's birthday in December 2011. He and my mom loved it! They ask me to make them another one just to have at home and eat. Know that my mother is not a sweets type person and she loved it, couldn't stop talking about it!

Pocoyo Theme Cake

For Daniella's 4th Birthday last year she wanted Pocoyo theme. So I made her a big blue icing cake (that was her favorite color then) with buttercream icing, because she loves to get it all over her fingers and face, and decorated with marshmallow fondant I made and colored with Pocoyo's colors. I believe one layer was chocolate and the other was vanilla with dulce de leche filling.

Princess Castle Cake

I made this one for my daughter Daniella's 3rd birthday. She wanted a princess theme so I made her a pink castle. Pink was her favorite color at that time. Now it's red so I'll be making a Red and pink cake for her 5th birthday in June. Oh how time flies! This cake took some work and measuring and cutting in order to make the layers, it was fun to make and looked and tasted great!
Jungle Animals theme cake. Here is the picture of cake I made for my son, Ian's first birthday last November. One layer was vanilla with vanilla frosting and the other layer was chocolate cake with chocolate and Oreo filling.I covered it with buttermcream icing and made the decorations with marshmallow fondant that I made from scratch. It turned out delicious!

Chocolate Cake with Chocolate Ganache!

I made this cake for my father in law's birthday last week. He is a chocolate lover so I went all chocolate for this one. Dark Chocolate cake, with chocolate frosting and chocolate ganache made with godiva dark and milk chocolate. I'm not a chocolate lover like he is and I loved it! Here is the Picture...and of course the recipe for the ganache, it's easy and oh sooo good! Enjoy it! 3 16oz chocolate bars of your choice, the better the chocolate the better the ganache you'll get at the end 1c heavy cream 1tbs rum (optional) Cut the chocolate bars in small pieces and put them in a bowl and set aside, make sure the bowl is big enough to mix with the cream Bring the heavy cream to a boil, make sure you keep an eye on it, it boils pretty fast, once it boils pour it over the chocolate and mix until you have a liquid than add the rum if you want. Let it cool before you pour it over the cake. When you pour it make sure you pour starting in the middle of the cake and out covering the sides as well. Let it cool before serving. Love it!

Sponge Bob Cake and butter cream recipe

Happy with the outcome! So I made my first sale! I made the Sponge Bob chocolate cake and it turned out very nice. The client said she liked it very much and she will be placing another order in June. She came all the way from D.C. by Metro to pick it up, and on the way back home she said people in the metro saw it and asked for my number. I haven't gotten any other orders yet, but I hope I will soon. Here are some of the pictures I took of the cake so you can see the process and how it looked at the end. Oh! I also used a new buttercream recipe that I adjusted to my taste and for now is the one I'm sticking with for all my future cakes. I like it because it's not too sweet and it's a mixture of butter and crisco shortening so it doesn't melt easily. Here's the recipe if you want to try it.. Buttercream Frosting 1c softened unsalted butter 1/2 c shortening 4c powdered sugar (or a little less if you want it less sweet) 1 tsp vanilla extract ( I use wilton's clear extract) Pinch of salt (optional) 2 1/2 tbs of heavy whip cream or whole milk (more if you want a thinner consistency) Mix all the dry ingredients first and set aside. Mix the butter and shortening together until creamy, add the vanilla extract Add the dry ingredients a little bit at a time and mix well I add the milk at the end until well mixed. Add color of your choice. This is good for icing a 9" cake.
